Fall is certainly gorgeous, especially in upstate NY. We always love to do the leaf peeping and apple picking. One thing I always envy other people is that they harvest many vegetables in their gardens. I have a brown thumb which is so well-known in my extended family. Seriously, I tried many times.

But it didn't stop me from enjoying the fall fruits and vegetables. I buy them from the farmer's markets or my nearby grocery stores. Why not taking the advantage of their prime and super low price, right?

If you happen not to have your own garden, like me, I highly encourage you to enjoy the season with these fall recipe ideas.


CHEF NOTES

Some of these recipes may not use fresh fall fruits and vegetables. You can follow them by using frozen or canned vegetables. Of course, fresh vegetables would be great. It may take a little bit longer to cut them up. Bear in mind that if you choose to use fresh vegetables, instead of frozen, cook time will significantly shortened.

When time is allowed, I do love to freeze my own vegetables, especially broccoli and cauliflower. To do so, cut them up to your desired size. Single layer the vegetables on a baking sheet and freeze them in a freezer overnight. Transfer the frozen vegetables into food storage bags.

Throughout the years, I learned a mistake. Transferring the freshly cut vegetables into a storage bag and freeze will cause freezer burn. It is because of the moisture from the vegetables and air inside the bag. Therefore, freeze the vegetables on a parchment paper-lined baking sheet first before storing into a bag. The parchment paper prevents vegetables from sticking on the baking sheet.

They can be called differently on the package. But the 3 basic ingredients are all you need. Otherwise, you can do it as I always do. That is using the frozen ones and skip the work.
