This easy Greek lemon chicken soup recipe is like a paleo version of Greek chicken and rice soup, or Greek lemon rice soup. It also has some resemblance to Greek lemon orzo soup.

I often turn to paleo soup recipes when I need a quick midweek dinner. Soups are so easy to make and everyone in our house loves them. Greek lemon soup one of our absolute favorites when it comes to paleo soup!

Healthy, hearty, comforting and delicious – this paleo lemon soup with cauliflower rice is packed to the brim with all the good things. It will transport you to the Mediterranean in one spoonful and will be a recipe you’ll turn to over and over.

How To Make Greek Lemon Chicken Soup

This Greek lemon chicken soup recipe is so simple that once you have made it one time, you’ll make it again and again without even thinking!

Start by sautéing the Mirepoix mix in olive oil until softened.

What is Mirepoix, you ask? It’s simply a mixture of carrots, onion, and celery. You can buy Mirepoix as a store bought, pre-prepared mixture to save time and reduce waste, but I often make my own. Just use a blend of carrots, onions and celery in equal quantities.

Next, add in the Greek spice blend , lemon juice, the chicken broth, chicken, and the cauliflower rice.

TIP: If you can’t find Greek seasoning, you can also use Italian seasoning, which is very similar.

I made this Greek lemon chicken soup recipe using frozen cauliflower rice to save time. There’s no need to thaw it and there’s no reason to dirty a food processor or blender to make your own. How’s that for a win-win situation?! But, if you don’t have the frozen kind, feel free to use fresh cauliflower for your cauliflower rice soup.

Once you’ve added everything, lower the heat and simmer for another 20 minutes. Turn off the heat and leave the soup to stand with the lid on for a final 10 minutes.

IMPORTANT: Don’t skip the step of letting the soup stand with the lid on for 10 minutes. This helps the chicken finish cooking gradually, making it super juicy!

Note: Don’t be alarmed if the chicken in this paleo chicken soup recipe turns a touch orange. The carrots in the soup base can make the outside of the chicken appear a little like lobster. You won’t notice the orange tinge when the chicken has been shredded and it in no way affects the flavor.

Finally remove the chicken from the cauliflower rice soup and transfer it to a clean cutting board. Using a knife and fork or shredding claws, shred the chicken.

Return the chicken to the pot, season with salt and pepper to taste, and serve immediately.

Can You Freeze Greek Lemon Chicken Soup?

Yes, this Greek lemon chicken soup recipe can be frozen and is a great standby for a last minute meal. To save room in your freezer, freeze the soup in plastic bags.

TIP: Consider freezing paleo chicken soup in individual portions, so that it can be reheated as and when you need it.

To reheat paleo cauliflower rice soup, allow the frozen soup to thaw in the refrigerator overnight – or defrost in the microwave in a pinch. Then, gently reheat the soup over a medium heat – breathing in the incredible soothing smell as you do so.

Whatever else you do, do not boil the soup as you reheat it, because this can cause the chicken to toughen.

TIP: Greek lemon soup will often separate as you reheat it, so stir frequently while reheating. Even if it separates slightly, though, you can stir it back together.

  • 4 tablespoons Olive oil
  • 1 cup Carrots (finely diced)
  • 1 cup Celery (finely diced)
  • 1 cup White onions (finely diced)
  • 4 cloves Garlic
  • 1/2 tablespoon Greek seasoning (or Italian seasoning)
  • 1/3 cup Fresh lemon juice
  • 1 stalk Fresh rosemary
  • 6 cups Chicken broth
